Nut creams are a great replacement for full fat milk cream with the added advantage of adding fibre and protein to help slow down glucose absorption and make eating some sweet treats not only taste good but healthier.

On Chocolate and Cranberry Cake in Baking and Deserts
Serves 6- 8 portions

Ingredients
Macadamia Cream
150g macadamia nuts
50g soft cream dairy or vegan cheese
2-3 dates or 25ml agave syrup or golden caster sugar
Optional 1tbsp brandy or vanilla essence
Method
Blend the ingredients together, taste and adjust sweetness, brandy etc to your taste.
You want the cream to be very thick a bit like icing so add the water a bit at a time until you have the right consistency.
This can be made a couple of days in advance. It should keep in the fridge for 5-7 days.
