Chestnut and Ginger Waffles or Pancakes

These make a lovely warming winter breakfast.  Chestnuts are quite high in sugars but by combining with the almonds the impact is reduced as well as adding more protein and fibre making them more filling.

Serves 4 or halve the ingredients for 2 waffles or pancakes
Preparation:  10 minutes         Cooking:  5 minutes

Swaps

V: 1tbsp ground chia, flax or camelina seeds do not add any extra liquid until the mixture has been blended and left to stand for 10-20 minutes.  Then adjust liquid as required.

NF:   Replace the almonds with oats, barley, or tigernut flour

 

Ginger: If you are not a fan of ginger, then add more warming spices such as mixed spice and cinnamon instead.

 

Storing and Freezing

These will store in the fridge for a few days and can be warmed up in the oven or toaster.

They will also freeze well.

 

Note:

This mixture is much thicker than you would usually have for waffles or pancakes, if you like a thinner pancake then add a little more liquid. 


Ingredients

40g whole almonds skin on or ready ground almonds

40g cooked chestnuts

20ml plant or dairy yogurt of your choice

1 egg or vegan option

1 tsp ground chia seeds

2 balls of stem ginger or 20 ml agave syrup or maple syrup or to taste

1 tsp mixed spice or cinnamon

1 tsp dried ginger

1/2 tsp bicarbonate of soda

1-2 tsp extra virgin olive oil (EVOO)


Method Waffles
  1. Heat your waffle maker following the instructions for your machine.

  2. If using whole almonds grind until they resemble coarse flour.

  3. Now add all the other ingredients and blend until everything is mixed together, it doesn’t need to be super fine, but all the ingredients should be combined.

  4. Leave to stand for 10-20 minutes before cooking.

  5. Spoon the mixture into your waffle maker ensuring you don’t add too much for your machine, check your instructions, and cook for about 4 minutes until the waffles are firm and come out easily.

Method Pancakes

  1. Heat some EVOO on a low to medium heat in a frying pan - you want it hot but not to smoking point.  Lower than you would normally have for pancakes.  They will brown very quickly and not cook through if heat is too high. 

  2. Spoon about a tablespoon of mixture per pancake into your pan, spread it out a little, and cook either side for 3-4 minutes.  They will be thicker more American style pancakes.   Cook one at a time or more if you can easily turn them in your pan.
